Herb-Roasted Chicken Thighs with Zucchini and lemon

Another Chef Curry original…this is a meal that I find myself making all the time at home.  The boneless skinless chicken thighs get tossed with a mixture of minced oregano, rosemary and sage.  Then some diced zucchini is added to the pan, and then roasted to perfection.

To finish off the dish, first a lemon sauce is made from lemon juice and a little bit of sugar to balance out the sour of the lemon.  finally, to balance out the textures, some slivered almonds are roasted in a pan, then tossed in with the finished dish.  This adds a wonderful crunchiness, that makes for a nutritious and delicious meal that I’m sure you and your family will enjoy.
