A powerhouse of flavor and nutrition. The subtle spiciness of the peppers and optional chipotle powder are a wonderful addition to the host of vegetables that round out this dish. Broiled chicken thighs are optional(and recommended) but if you want a dish that’s vegan, that’s an option as well. To finish off the package of wholesomeness, the quinoa is a wonderful base of this meal…one that I know your family will enjoy.
